I Cut My Weight in Half on a Whole-Food, Plant-Based Diet

I started the diet for health reasons, and the weight loss was an added bonus. I was frustrated with my inability to lose weight, even though I was running regularly. I kept reading about the benefits of a plant-based diet and decided to give it a try.

I didn’t have a specific goal in mind. My main motivation was to try to get healthier. I’m 46 years old, so I thought if I could lose some weight and keep it off, my blood pressure would go down and my cholesterol would fall into a healthy range.

A typical day’s food intake while following my whole-food, plant-based diet went something like this:

Breakfast: Oatmeal with bananas

Lunch: Vegetable soup or salad

Snacks: Pretzels, popcorn or apples with peanut butter

Dinner: Grilled vegetables with pasta or rice
